Spinach Stuffed Mushrooms
Serves 8
1 cup cooked spinach
8 large mushrooms of choice
1 bunch green onions, finely chopped
2 tablespoon butter
2 tablespoon extra virgin olive oil
1/4 teaspoon of nutmeg
sea salt and pepper

Chop and cook spinach, once cooked strain and press out liquid. Wash mushrooms and remove stem. Finely chop stem and onions, mix together and saute with butter and olive oil on a medium-low heat until tender. Once tender add spinach and cook until all moisture has evaporated. Remove from heat and add nutmeg. Stuff each mushroom cap with 1 spoonful of stuffing. Place in butter glass pan with 1/4 inch of water on the bottom and cook at 350 degrees for about 20 minutes. This is a good side to add to a beef base dinner.
